Method
Brownie Base
- 1
Preheat Oven
Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
- 2
Melt Butter
In a saucepan over medium heat, melt 1 cup of unsalted butter. Remove from heat and let it cool slightly.
- 3
Mix Wet Ingredients
In a large mixing bowl, combine the melted butter and 2 cups of granulated sugar. Whisk until well blended. Then, add in 4 large eggs and 2 tsp of vanilla extract, whisking until smooth.
- 4
Combine Dry Ingredients
In a separate bowl, sift together 1 cup of all-purpose flour, 3 tbs of cocoa powder, 1 tsp of baking powder, and 0.5 tsp of salt.
- 5
Combine Mixtures
Gradually fold the dry ingredients into the wet mixture until just combined. Stir in 1 cup of semi-sweet chocolate chips.
- 6
Bake Brownie Base
Pour the brownie batter into the prepared baking pan and spread evenly. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs.
Cream Cheese Topping
- 7
Prepare Cream Cheese Mixture
While the brownie base is baking, in a mixing bowl, beat 8 oz of cream cheese until smooth. Gradually add in 1 cup of powdered sugar and 1 tsp of vanilla extract, mixing until well incorporated.
- 8
Add Chocolate Chips
Fold in 0.5 cup of mini chocolate chips into the cream cheese mixture.
- 9
Spread on Brownies
Once the brownie base has finished baking, remove it from the oven and let it cool for about 10 minutes. Spread the cream cheese mixture evenly over the warm brownies.
- 10
Final Bake
Return the pan to the oven and bake for an additional 10-15 minutes, until the topping is set.
