Making the Dough
Once the potatoes are cool enough to handle, mash them until smooth. In a large mixing bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a soft dough forms. If the dough is too sticky, add more flour, a tablespoon at a time.

Shaping the Gnocchi
On a lightly floured surface, divide the dough into quarters. Roll each piece into a long rope about 1/2 inch thick. Cut the rope into 1-inch pieces. Optionally, use a fork to gently press each piece to create ridges.

Boiling the Gnocchi
Bring a large pot of salted water to a boil. Drop the gnocchi into the boiling water, cooking in batches if necessary. Once they float to the surface, they are done (about 2-3 minutes). Use a slotted spoon to remove them and set aside.

Preparing the Sauce
In a large skillet over medium heat, melt the butter. Add the fresh sage leaves and cook for about 1-2 minutes until the butter is browned and the sage is crispy. Add the cooked gnocchi and toss gently to coat.
