Method

Preparation of Salad Base

  1. 1

    Prepare the Vegetables

Wash the mixed greens thoroughly and pat them dry. Halve the cherry tomatoes, peel and dice the cucumber, and chop the bell pepper and carrot into bite-sized pieces.

  2. 2

    Combine the Salad Base

In a large salad bowl, combine the mixed greens, halved cherry tomatoes, diced cucumber, chopped bell pepper, and shredded carrot. Toss gently to mix.

Cooking Protein

  1. 3

    Grill Chicken

Season the chicken breasts with salt and pepper. Preheat your grill or grill pan to medium-high heat and grill the chicken for 6-7 minutes on each side or until fully cooked. Remove from the grill and let it rest for a few minutes before slicing.

  2. 4

    Prepare the Chickpeas

If using canned chickpeas, drain and rinse them under cold water. If using dried chickpeas, soak them overnight and cook until tender.

Dressing Preparation

  1. 5

    Mix the Dressing

In a small bowl or jar, combine the olive oil, apple cider vinegar, Dijon mustard, honey, salt, and black pepper. Whisk or shake until well combined.

Assembly

  1. 6

    Combine All Ingredients

Add the grilled chicken slices and chickpeas to the salad bowl with the mixed greens and vegetables. Drizzle the dressing over the top.

  2. 7

    Toss and Serve

Gently toss the salad to combine all ingredients and ensure the dressing is evenly distributed. Serve immediately.
