Bake the Potatoes
Preheat your oven to 400°F (200°C). Wash and scrub the russet potatoes thoroughly to remove any dirt. Pat them dry with a clean towel.

Bake
Place the seasoned potatoes directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes, or until the potatoes are tender when pierced with a fork.

Cool and Cut
Once baked, remove the potatoes from the oven and let them cool for 10-15 minutes. Carefully cut each potato in half lengthwise and scoop out some of the flesh, leaving a thin layer of potato to form the skin.

Preheat your oven to 375°F (190°C). Place the hollowed potato skins on a baking sheet. Fill each potato skin with shredded cheddar cheese, crumbled bacon, and chopped green onions.

Once filled, return the potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
