    Bake the Potatoes

    Preheat your oven to 400°F (200°C). Wash and scrub the russet potatoes thoroughly to remove any dirt. Pat them dry with a clean towel.

    Prepare the Potatoes

    Poke each potato several times with a fork to allow steam to escape during baking. Rub the outside of each potato with olive oil and sprinkle salt and black pepper evenly over them.

    Bake

    Place the seasoned potatoes directly on the oven rack or on a baking sheet. Bake for about 45-60 minutes, or until the potatoes are tender when pierced with a fork.

    Cool and Cut

    Once baked, remove the potatoes from the oven and let them cool for 10-15 minutes. Carefully cut each potato in half lengthwise and scoop out some of the flesh, leaving a thin layer of potato to form the skin.

Filling

    Fill the Potato Skins

    Preheat your oven to 375°F (190°C). Place the hollowed potato skins on a baking sheet. Fill each potato skin with shredded cheddar cheese, crumbled bacon, and chopped green onions.

    Bake Again

    Once filled, return the potato skins to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

    Serve

    Remove the potato skins from the oven and let them cool for a couple of minutes. Serve warm with a dollop of sour cream on top of each potato skin.
