Make the Dough
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the eggs. Using a fork, gradually incorporate the flour from the edges into the eggs until a dough forms.

Knead the Dough
Transfer the dough to a lightly floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Filling
In a medium bowl, combine ricotta cheese, Parmesan cheese, egg yolk, salt, black pepper, and chopped basil. Mix well until all ingredients are fully incorporated.

Cook the Meat
In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until the onion is translucent, about 5 minutes. Add ground beef and cook until browned, breaking it apart with a spoon.

Make the Sauce
Add the canned tomatoes, tomato paste, Italian seasoning, salt, and black pepper to the skillet. Stir well to combine and let it simmer for 20 minutes, stirring occasionally.
Assemble and Cook Ravioli

Roll out the Dough
After resting, divide the dough into four pieces. Roll out each piece into thin sheets using a pasta machine or rolling pin.

Fill and Shape Ravioli
Place teaspoons of the filling about 1 inch apart on one sheet of dough. Moisten the edges with water, then fold the dough over to cover the filling. Press down to seal, then cut between the filling to create individual ravioli.

Cook the Ravioli
Bring a large pot of salted water to a boil. Add the ravioli and cook for about 4-5 minutes or until they float to the top. Use a slotted spoon to remove them.

Serve
Plate the ravioli and top with the meat sauce. Garnish with additional Parmesan cheese and fresh basil if desired.
