Preparing the Cannoli Shells

    Make the Dough

    In a mixing bowl, combine the flour, sugar, cocoa powder, and salt. Mix well. Add the unsalted butter and rub it into the flour mixture using your fingers until it resembles coarse crumbs. Stir in the egg yolk and white wine or vinegar. Gradually add water, one tablespoon at a time, kneading until the dough is smooth and elastic.

    Rest the Dough

    Wrap the dough in plastic wrap and let it rest for at least 30 minutes at room temperature.

    Roll and Cut the Dough

    On a lightly floured surface, roll out the dough until it’s about 1/8 inch thick. Use a round cutter (about 4 inches in diameter) to cut out circles.

    Shape the Shells

    Wrap each circle of dough around a cannoli tube, sealing the edges with a bit of water.
