    Prepare the Apples

    Wash and core the fresh apples, then chop them into small pieces. Measure out 10 cups of chopped apples.

    Combine Ingredients

    In a large pot, combine the chopped apples, water, and brown sugar. Stir well to ensure the sugar is evenly distributed.

    Add Spices

    Add cinnamon sticks, whole cloves, nutmeg, lemon juice, and vanilla extract to the pot. Stir to combine all ingredients.

    Cook the Mixture

    Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low and let it simmer for about 30-40 minutes, or until the apples are soft.

    Mash the Apples

    Using a potato masher or a wooden spoon, mash the softened apples in the pot to release their juices.

    Strain the Cider

    Place a fine mesh strainer or cheesecloth over a large bowl. Pour the apple mixture into the strainer to separate the liquid from the solids. Press down to extract as much juice as possible.

    Cool and Serve

    Let the strained cider cool to room temperature. Serve it warm or chilled, as desired. Store any leftovers in the refrigerator.
