Wine Making Process

    Harvesting the Grapes

    Select ripe Pinot Noir grapes from the vineyard. Ensure they are free from rot and disease.

    Crushing the Grapes

    Crush the harvested grapes to release the juice. This can be done by hand or using a grape crusher.

    Adding Sulfur Dioxide

    Add 50 mg/L of sulfur dioxide to the crushed grapes to prevent oxidation and spoilage.

    Fermentation

    Add 5 grams of wine yeast to the grape juice. Allow the mixture to ferment in a sanitized container for 7-14 days at a controlled temperature of 20-25°C (68-77°F).

    Pressing

    After fermentation, press the mixture to separate the liquid wine from the solids (the skins and seeds).

    Maturation

    Transfer the wine to a clean container and add oak chips if desired. Allow it to mature for at least 6 months, checking periodically.

    Bottling

    Once maturation is complete, filter the wine and transfer it to sterilized bottles. Seal them with corks.
