Preparation Steps

  1. 1

    Prepare the Apples

Wash and core the fresh apples. Cut them into quarters, ensuring to remove any seeds.

  2. 2

    Combine Ingredients

In a large pot, combine the quartered apples and 4 cups of water. Bring the mixture to a boil over medium-high heat.

  3. 3

    Simmer the Mixture

Once boiling, reduce the heat to low and let the mixture simmer for about 1 hour, stirring occasionally. The apples should be soft and mushy.

  4. 4

    Add Sugar and Spices

Stir in 1 cup of sugar, 3 cinnamon sticks, 5 whole cloves, 1 tsp of grated nutmeg, 2 tbs of lemon juice, and 1 tsp of vanilla extract. Continue to simmer for an additional 30 minutes.

  5. 5

    Strain the Cider

After simmering, remove the pot from heat. Use a fine-mesh strainer or cheesecloth to strain the mixture into another pot or large bowl, pressing down on the apple solids to extract all the liquid.

  6. 6

    Cool and Serve

Allow the cider to cool to room temperature, then refrigerate. Serve chilled or warm, garnished with a cinnamon stick if desired.
