Prepare the Apples
Wash and core the fresh apples. Cut them into quarters, ensuring to remove any seeds.

Combine Ingredients
In a large pot, combine the quartered apples and 4 cups of water. Bring the mixture to a boil over medium-high heat.

Simmer the Mixture
Once boiling, reduce the heat to low and let the mixture simmer for about 1 hour, stirring occasionally. The apples should be soft and mushy.

Strain the Cider
After simmering, remove the pot from heat. Use a fine-mesh strainer or cheesecloth to strain the mixture into another pot or large bowl, pressing down on the apple solids to extract all the liquid.

Cool and Serve
Allow the cider to cool to room temperature, then refrigerate. Serve chilled or warm, garnished with a cinnamon stick if desired.
