Mashing the Grains
In a large brew kettle, heat 5 gallons of water to 165°F (74°C). Add the crushed pale malt, crystal malt, chocolate malt, and roasted barley to the water. Stir well and maintain the temperature at around 150°F (65°C) for 60 minutes.

Sparging
After mashing, sparge the grains with enough hot water to collect about 6 gallons of wort in the kettle. Bring the wort to a boil.

Boiling the Wort
Once boiling, add 1 tablespoon of bittering hops (Cascade) and boil for 60 minutes. Add the aroma hops (Fuggle) during the last 5 minutes of the boil.

Cooling the Wort
After boiling, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

Fermentation
Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast. Seal the vessel with an airlock and allow it to ferment for 1-2 weeks at around 68°F (20°C).

Bottling
Once fermentation is complete, dissolve 0.5 cups of priming sugar in a small amount of boiling water. Add this solution to the beer before bottling to carbonate. Bottle the beer and cap the bottles.

Conditioning
Let the bottled beer condition at room temperature for about 2 weeks to develop carbonation.
