Brewing Instructions

    Mashing

    Begin the brewing process by mashing the grains.

    In a large pot, heat 3 gallons of water to about 165°F (74°C). Once heated, add the Pale Malt and Crystal Malt. Stir well and maintain the temperature around 150°F (65°C) for 60 minutes.

    Sparging

    Extract the sugars from the grains.

    After mashing, sparge the grains with 2 gallons of heated water at 170°F (77°C) to rinse out the sugars. Collect the liquid (wort) in a kettle.

    Boiling

    Boil the wort to extract flavors and preserve the beer.

    Bring the wort to a boil and add the Northern Brewer hops. Boil for 60 minutes, stirring occasionally.

    Cooling

    Cool the wort before fermentation.

    After boiling, cool the wort rapidly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

    Fermentation

    Ferment the beer using lager yeast.

    Transfer the cooled wort to a sanitized fermentation vessel. Pitch the yeast according to the packet instructions and seal the fermentation vessel. Allow it to ferment at about 50°F (10°C) for 2-3 weeks.

    Bottling

    Prepare the beer for carbonation.

    After fermentation, dissolve the priming sugar in a small amount of boiling water. Add this to the beer before bottling to carbonate. Bottle the beer using sanitized bottles and caps.

    Aging

    Allow the beer to carbonate and age.

    Store the bottled beer in a cool, dark place for at least 2 weeks to carbonate.
