Brewing Process

    Mashing

    Heat water and steep the grains.

    In a large brew kettle, heat 5 gallons of water to about 160°F (71°C). Add the Pale Malt, Crystal Malt, and Caramel Malt to the water.

    Maintain the temperature between 150°F and 155°F (65°C and 68°C) for 60 minutes. Stir occasionally.

    Sparging

    Extract sugars from the grains.

    After mashing, remove the grains and sparge with hot water (around 170°F or 77°C) to collect about 6.5 gallons of wort.

    Boiling

    Boil the wort and add hops.

    Bring the wort to a boil and add 1 oz of Hallertau hops. Boil for 60 minutes.

    During the last 15 minutes of the boil, add the 0.5 oz of Cascade hops.

    Cooling and Fermentation

    Cool the wort and pitch the yeast.

    After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches about 70°F (21°C).

    Transfer the cooled wort to a sanitized fermentation vessel and pitch the yeast.

    Seal the vessel with an airlock and ferment for about 1-2 weeks at 65-70°F (18-21°C).

    Bottling

    Bottle the beer and carbonate.

    After fermentation, siphon the beer into sanitized bottles, leaving some headspace. Add priming sugar if bottling for carbonation.

  15. 15

    Cap the bottles and let them carbonate at room temperature for about 1-2 weeks.
