Prepare tuna
Open the canned tuna and drain thoroughly in a fine mesh strainer or by pressing with the can lid. Place drained tuna in a medium mixing bowl and use a fork to flake into bite-sized pieces.

Mix dressing
In a small bowl combine the mayonnaise, Dijon mustard, and lemon juice. Whisk until smooth.

Combine filling ingredients
Add the diced celery, minced red onion, and chopped capers (if using) to the flaked tuna. Pour the mayonnaise mixture over the tuna. Fold gently with a spatula until evenly coated. Season with the salt and freshly ground black pepper, tasting and adjusting seasoning as needed. Cover and refrigerate for 10–15 minutes to let flavors meld (optional).

Assemble sandwiches
Lay two slices of bread buttered/toasted-side down. Divide the tuna filling evenly between them (about half the filling per sandwich). Top the tuna with two lettuce leaves and two tomato slices and/or pickles if using. Close each sandwich with the remaining bread slices, toasted side up.

Cut sandwiches in half on the diagonal or down the middle. Serve immediately. Store any leftover tuna filling in an airtight container in the refrigerator for up to 3 days.
