Mocha Sponge Cake

Preheat and prepare pans
Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper; lightly grease parchment and flour the pans or dust with cocoa.

Combine espresso and milk
Dissolve 1 tsp instant espresso powder in 3 tbsp warm milk; set aside to cool slightly.

Beat eggs and sugar
In a large bowl (or stand mixer with whisk), beat 4 large eggs with 1 cup granulated sugar and 1 tsp vanilla on high speed about 6–8 minutes until thick, pale, and tripled in volume (ribbon stage).

Sift dry ingredients
Sift together 1 cup all-purpose flour, 2 tbsp unsweetened cocoa powder, 1 tsp baking powder, and 1 tsp fine salt into a bowl to remove lumps.

Fold dry into wet
Gently fold one-third of the sifted dry ingredients into the whipped eggs to loosen, then fold in the remaining dry ingredients in two additions. Use a spatula and fold carefully to keep volume.

Bake
Divide batter evenly between prepared pans. Smooth tops and bake 18–22 minutes, or until a toothpick inserted in center comes out with a few moist crumbs. Rotate pans halfway if your oven is uneven.

Cool
Let cakes cool in pans 10 minutes, then run a knife around edges and invert onto a wire rack. Remove parchment and cool completely before filling (1–2 hours).
Mocha Cream (light filling)

Dissolve espresso
Dissolve 1 tsp instant espresso powder in 1 tsp hot water; let cool.

Whip cream
In a chilled bowl, whip 1 cup heavy cream with 3 tbsp powdered sugar and 1 tsp vanilla until soft peaks form.

Combine with mascarpone
In a separate bowl, lightly beat 6 oz mascarpone with the cooled espresso until smooth. Fold the whipped cream into the mascarpone in two additions until homogenous and airy. Chill until ready to assemble.
Mocha Buttercream (for topping and crumb coat)

Bloom espresso
Dissolve 2 tsp instant espresso powder in 1 tbsp hot water; set aside to cool to room temperature.

Beat butter
In a stand mixer bowl, beat 1 cup room-temperature unsalted butter on medium-high speed 2–3 minutes until pale and fluffy.

Add espresso and adjust texture
Add the cooled espresso, 2 tbsp heavy cream (or milk), and a pinch of salt. Mix on medium speed 2–3 minutes until smooth and spreadable. If too stiff, add more cream 1 tsp at a time; if too loose, add a tablespoon more powdered sugar.

Make optional espresso simple syrup
If using, warm 1/4 cup simple syrup and stir in 1/2 tsp instant espresso powder until dissolved. Let cool to room temperature.

Level cakes and split (if desired)
If cakes domed, level tops with a serrated knife. For thinner layers, slice each cake horizontally to produce 3 total layers (optional).

Soak layers (optional)
Brush each cake layer lightly with espresso simple syrup to add moisture and coffee flavor. Use about 1–2 tbsp per layer depending on thickness.

Fill cake
Place first cake layer on serving plate or turntable. Pipe or spread an even layer (about 3/4 cup) of mocha cream. Repeat with remaining layers, finishing with cake top.

Crumb coat
Apply a thin layer of mocha buttercream all over the cake to seal in crumbs. Chill the cake 20–30 minutes until buttercream firms.

Final frost
Apply the remaining mocha buttercream in an even final layer. Smooth with an offset spatula or make decorative swirls. Chill briefly to set if desired.

Garnish and serve
Dust top with cocoa powder or sprinkle chocolate shavings. Slice with a hot, clean knife for neat slices. Store refrigerated up to 3 days; bring to room temperature before serving for best texture.
