Prep and macerate berries
Hull and quarter the strawberries. Combine strawberries, blueberries, and raspberries in a medium bowl. Add granulated sugar, lemon juice, and vanilla extract. Gently toss to combine.

Reserve about 1/4 cup of the fruit with juices for topping/garnish; lightly mash the remaining berries with a fork to create a chunky compote texture (leave some whole fruit for texture).

Prepare cream cheese base
In a medium bowl, beat the softened cream cheese with a hand mixer or whisk until smooth and free of lumps. Add powdered sugar, vanilla extract, lemon zest, and a pinch of salt. Mix until combined and creamy.

Whip the cream
In a chilled mixing bowl, pour the heavy cream and whip with a mixer on medium-high speed until soft peaks form (about 2–3 minutes).

Fold whipped cream into the sweetened cream cheese gently: add about one-third of the whipped cream to the cream cheese to lighten it, mix gently, then fold in the remaining whipped cream in two additions. Use a spatula and fold with a cutting motion to keep the mixture airy and cloud-like.

Taste and adjust: if you prefer sweeter, fold in up to 1 additional tablespoon powdered sugar; if you want brighter flavor, add up to 1/4 tsp extra lemon zest.

Add a layer of the mashed berry compote (about 2–3 tablespoons) over the crumbs.

Pipe or spoon a generous cloud of the whipped cream-cheesecake mixture on top of the berry layer (about 1/3 to 1/2 cup per serving). Smooth or swirl the top as desired.

Top the cloud with the reserved whole berries and juices (the 1/4 cup set aside). Sprinkle the remaining crushed crackers or biscotti crumbs for crunch.
