    Hull and quarter the strawberries. Combine strawberries, blueberries, and raspberries in a medium bowl. Add granulated sugar, lemon juice, and vanilla extract. Gently toss to combine.

    Let the mixture sit at room temperature for 15–20 minutes so the berries release their juices and the sugar dissolves, creating a slightly saucy base. After macerating, gently taste and adjust sweetness with an extra teaspoon of sugar or a splash more lemon if desired.

    Reserve about 1/4 cup of the fruit with juices for topping/garnish; lightly mash the remaining berries with a fork to create a chunky compote texture (leave some whole fruit for texture).

Whipped Cloud

    Prepare cream cheese base

    In a medium bowl, beat the softened cream cheese with a hand mixer or whisk until smooth and free of lumps. Add powdered sugar, vanilla extract, lemon zest, and a pinch of salt. Mix until combined and creamy.

    In a chilled mixing bowl, pour the heavy cream and whip with a mixer on medium-high speed until soft peaks form (about 2–3 minutes).

    Fold whipped cream into the sweetened cream cheese gently: add about one-third of the whipped cream to the cream cheese to lighten it, mix gently, then fold in the remaining whipped cream in two additions. Use a spatula and fold with a cutting motion to keep the mixture airy and cloud-like.

Assembly
