    Warm croissants

    Preheat oven to 325°F (160°C). Place croissants on a baking sheet and warm for 5–7 minutes until lightly crisp and warm through. Remove and let cool slightly until safe to handle.

    Using a sharp serrated knife, slice each croissant horizontally about two-thirds of the way through (leave a hinge) to create a pocket for the filling.

Filling

    Prepare strawberries

    Hull and slice the fresh strawberries thinly (about 1/8–1/4 inch). Place slices in a bowl with 2 tablespoons granulated sugar and 1 teaspoon lemon juice. Toss gently and let macerate for 10–15 minutes until strawberries release juices but still hold shape.

    Reserve 1 tablespoon of the maceration juices to drizzle into the croissants if desired; drain remaining juices slightly so filling isn't too wet.

    In a small bowl, beat the softened cream cheese with 1 tablespoon heavy cream, 2 teaspoons powdered sugar, and 1 teaspoon vanilla extract until smooth and spreadable. If you prefer a lighter texture, whip for 30 seconds with a fork or small whisk. Taste and adjust sweetness if desired.

    If you want a loose whipped filling, whip 2 tablespoons heavy cream to soft peaks and fold into the cream cheese mixture; otherwise use the cream cheese mixture as-is.

Assemble & Finish

    Assemble croissants

    Open each warm croissant gently. Spread about 1 tablespoon of the cream cheese mixture into the bottom half of each croissant (adjust to taste). Arrange 3 sliced strawberries (or a generous tablespoon of macerated strawberries) into each croissant pocket. Drizzle a small amount (about 1/4 teaspoon) of the reserved maceration juice over the fruit if desired.

    Close croissants lightly so filling stays in place. Dust the tops with 1 tablespoon powdered sugar using a small sieve and garnish each with a mint leaf.

    Serve immediately while croissants are still slightly warm for best texture. Leftover assembled croissants can be refrigerated up to 24 hours (wrap loosely) but the pastry will lose some crispness.
