Prepare ingredients
Cut the cold unsalted butter into small cubes so it softens slightly but remains cool.

In a medium bowl, combine the granulated sugar, all-purpose flour, cornstarch, breadcrumbs (if using) and a pinch of salt. Toss to mix evenly.

Add the cubed butter to the dry mix. Using your fingertips, a pastry cutter, or two forks, rub the butter into the dry ingredients until the mixture resembles coarse crumbs and some pea‑sized pieces remain. Do not overwork — you want varied crumbs.

Spread the crumb mixture in a single layer on a parchment-lined baking sheet. Refrigerate for 15 minutes to firm the butter so crumbs hold shape while baking.

Preheat oven to 180°C (350°F). Bake the chilled crumbs for 12–16 minutes, stirring gently halfway through, until golden and crisp. Watch closely near the end to prevent burning.

Remove from oven and let cool completely on the sheet; crumbs will crisp further as they cool. Once cool, break any large clumps into even crumble. Reserve until assembly.

Prepare strawberries
Hull and halve 300 g fresh strawberries. Reserve about 6–8 nice halves for garnish if desired. Place the rest in a blender or food processor and purée until smooth. You should have roughly 200–220 ml of purée. Taste and stir in 1 tablespoon lemon juice and 30–40 g powdered sugar if the berries need extra sweetness.

Bloom gelatin
Sprinkle the 5 g gelatin over 30 ml cold water in a small bowl. Let sit 5 minutes to bloom until swollen.

Warm the bloomed gelatin gently (either 10–15 seconds in the microwave or over a small pan of barely simmering water) until fully dissolved and liquid but not hot. Take about 2–3 tablespoons of the strawberry purée and whisk into the dissolved gelatin to temper it, then whisk that mixture back into the remaining purée until smooth and evenly incorporated. Set aside to cool slightly.

Prepare cream base
In a mixing bowl, beat the softened cream cheese with the remaining 10–20 g powdered sugar and vanilla extract until smooth and lump-free.

In a separate chilled bowl, whip the cold heavy cream to soft peaks. Avoid overwhipping; you want a light, airy texture.

Fold the whipped cream gently into the cream cheese mixture in three additions, maintaining as much air as possible. Then fold in the cooled strawberry purée with dissolved gelatin until fully combined and uniform pink color is achieved.

Select serving vessels: small jars, dessert cups, or a shallow tart pan all work. Spoon or pipe a base layer (about one-third) of the chilled strawberry cream into each serving dish.

Sprinkle a generous layer of cooled soboro crumble over the cream (about one-third of the crumble). Press lightly so some crumbs sink into the cream for texture contrast.

Add another layer of strawberry cream (another one-third), smoothing the top, then repeat with more crumble to create visible layers. Finish with a final dollop or pipe of strawberry cream if space allows.

Top with reserved strawberry halves, a few whole crumbs for crunch, and a mint leaf if using. Dust lightly with powdered sugar if desired.
