    Reduce speed to low and gradually add 3 cups confectioners' sugar, about 1 cup at a time, to prevent a sugar cloud. Once combined, increase speed to medium and beat until light and creamy, about 2 minutes. Add 1 teaspoon vanilla extract and 1/4 teaspoon fine sea salt; mix until incorporated. Taste and adjust salt or sugar to balance sweetness if needed.

    If frosting is too thick, add 1 tablespoon of milk or heavy cream at a time until spreadable. If too thin, add up to 1/2 cup more confectioners' sugar, 1 tablespoon at a time, until desired consistency is reached.

    If cake domes have risen, level the tops with a serrated knife to create even layers. Place one cake layer on a cake board or serving plate. Spread about 1 cup of cream cheese frosting evenly over the first layer, leaving a 1/4-inch border. Press a few reserved crumbs or chopped pecans into the frosting edge if you like textured sides.
