    Proof yeast

    In a small bowl, combine warm water (about 105–110°F / 40–43°C), sugar, and active dry yeast. Stir gently and let sit 5–8 minutes until foamy and fragrant.

    Mix dough

    In a large bowl, whisk together the flour and salt. Make a well in the center and pour in the foamy yeast mixture and olive oil. Stir with a wooden spoon or dough hook until a shaggy dough forms.

    Knead

    Turn the dough onto a lightly floured surface and knead by hand 8–10 minutes until smooth and elastic (or use a stand mixer with dough hook on medium speed for 6–7 minutes). Add small additional flour if dough is very sticky, 1 tbsp at a time.

    First rise

    Lightly oil a clean bowl, place the dough inside, turning to coat. Cover with plastic wrap or a damp towel and let rise in a warm, draft-free place until doubled, about 60–75 minutes.

    Prepare filling

    While the dough rises, measure and arrange pizza sauce, shredded mozzarella, pepperoni, grated parmesan, dried oregano, and red pepper flakes so they are ready to assemble.

    Shape dough

    After the dough has doubled, gently deflate it and transfer to a lightly floured surface. Roll or stretch into a rectangle roughly 12 x 9 inches (for a single loaf) or two smaller rectangles if making two loaves.

    Assemble

    Spread an even layer of about 3/4 cup pizza sauce over the dough, leaving a 1/2-inch border around the edges. Sprinkle about 1 1/2 cups shredded mozzarella evenly over the sauce, then distribute pepperoni slices. Sprinkle the remaining mozzarella (about 1/2 cup), parmesan, dried oregano, and red pepper flakes over the top.

    Roll or fold

    Starting from a long edge, tightly roll the dough into a log like a jelly roll, sealing the seam by pinching the dough. Tuck the ends under to seal. For a braided or layered pull-apart style, you can slice the roll lengthwise and twist pieces; otherwise proceed to shape as a single loaf.

    Second rise

    Place the shaped loaf seam-side down onto a parchment-lined baking sheet or into a lightly greased loaf pan. Cover loosely and let rise 30–40 minutes until puffy.

    Egg wash

    Preheat oven to 375°F (190°C). Whisk the egg with 1 teaspoon water to make an egg wash, then brush the top of the loaf lightly to promote browning.

    Bake

    Bake in the preheated oven 25–30 minutes until the crust is golden brown and an instant-read thermometer inserted into the center reads about 190–200°F (88–93°C). If the top browns too quickly, tent with foil for the last 5–10 minutes.
