Strawberry Yogurt Base

Prepare strawberries
Place 2 cups hulled and quartered strawberries in a blender or food processor. Pulse until coarsely pureed but still slightly textured (about 8–10 pulses). Reserve 2–3 tablespoons of the coarse puree for layering, if you like visible fruit pieces.

Mix base
In a medium bowl whisk together 1 cup Greek yogurt, 1 cup cream, 3 tablespoons honey, 1 teaspoon vanilla extract, 1 teaspoon lemon juice, and a pinch of fine sea salt until smooth and slightly thick. Taste and adjust sweetness with up to 1 tablespoon more honey if desired.

Fold strawberries into base: Gently fold the coarse strawberry puree into the yogurt-cream mixture until evenly distributed but still giving pink streaks. Do not overmix if you want a marbled look.
Strawberry Swirl (optional concentrated)

Cook fruit
In a small saucepan combine 1 cup chopped strawberries, 2 tablespoons sugar, and 2 tablespoons water. Cook over medium heat, stirring occasionally, until the fruit breaks down and the mixture becomes saucy, about 6–8 minutes.

Thicken and cool
Mix 1 teaspoon cornstarch with 1 teaspoon cold water to make a slurry. Stir slurry into the hot strawberry mixture and cook 1 more minute until slightly thickened. Remove from heat and let cool to room temperature. Chill briefly if you want a firmer swirl.

If using, spoon 2–4 tablespoons of this concentrated swirl into the bottom of serving glasses and also reserve a spoonful for finishing. It will produce a brighter, deeper pink ribbon when layered with the yogurt base.
Assemble

Layer: If using the swirl, add 1–2 tablespoons to the bottom of each serving glass. Spoon or pipe a layer (~3–4 tablespoons) of the yogurt-strawberry base on top, then add a small spoonful of the reserved coarse puree or swirl, then another layer of yogurt base. Repeat until glasses are filled, finishing with the yogurt base on top. For a single large bowl, use the same layering approach.

Crunchy Topping

Combine 3 tablespoons crushed graham crackers, 2 tablespoons toasted slivered almonds and 1 teaspoon powdered sugar in a small bowl. Sprinkle 1–2 teaspoons over each assembled serving to add texture just before serving so it stays crisp.
Garnish & Serve

Garnish each serving with a whole small strawberry and a fresh mint leaf. Serve immediately if you want the crunchy topping crisp, or chill 15–20 minutes before serving for a slightly firmer texture throughout.

Storage: Store leftovers covered in the refrigerator for up to 2 days. The crunchy topping will soften; keep extra topping separate and add just before serving.
