Prepare glass
If you want a sugared rim, run the lime wheel around the rim of a highball glass and dip the rim into a shallow plate of sugar so the sugar adheres. Fill the glass with ice and set aside.

Build in a shaker
Add vodka, peach schnapps, fresh lime juice, cranberry juice, pineapple juice, simple syrup and 2 dashes of Angostura bitters into a cocktail shaker. Add a generous handful of ice (about 1 cup).

Shake
Secure the shaker lid and shake vigorously for 10–15 seconds until the exterior of the shaker is cold and slightly frosted.

Strain & finish
Strain the mixture into the prepared highball glass over the ice. If you prefer a lighter, fizzy finish, top with up to 1 oz club soda and gently stir once to combine. Taste and add extra simple syrup (1/4 oz increments) if you prefer it sweeter.

Garnish
Garnish with the lime wheel on the rim and a sprig of fresh mint tucked into the top of the drink.

Serve immediately while cold. Recipe scales easily — multiply ingredient quantities by the number of servings and shake in a larger shaker or batch in a pitcher with ice, tasting before serving. If batching, omit the club soda until serving so it stays fizzy.
