Brew and chill
Brew a strong cup of coffee (about 1 cup). For best flavor, use a dark-roast or espresso-style brew. Allow it to cool to room temperature, then chill in the fridge or use pre-chilled coffee. Stir in the instant espresso powder until dissolved to boost coffee intensity.

In a small bowl, whisk together the unsweetened cocoa powder and granulated sugar with 1–2 tablespoons of the chilled coffee to form a smooth chocolate paste. This prevents lumps. Stir in the simple syrup (or chocolate syrup) until fully incorporated.

In a blender, combine the chilled coffee (about 1 cup), the chocolate mixture, whole milk, heavy cream (if using) and ice cubes. Secure the lid.

Blend
Pulse on low once to break the ice, then blend at high speed for 20–30 seconds until smooth and frothy. Check consistency: it should be thick but pourable. If too thin, add 1/4 cup more ice and blend 10–15 seconds; if too thick, add 1–2 tablespoons milk and blend briefly.
