Brew 1 cup of very strong coffee or a double espresso (about 1 cup total). Pour it into a heatproof measuring cup or medium bowl so it's ready to assemble.

In a small bowl, whisk together 1 tablespoon unsweetened cocoa powder and 1.5 teaspoons granulated sugar. Add 2–3 tablespoons of the hot coffee and whisk to form a smooth chocolate paste (this prevents lumps).

Pour the chocolate paste back into the remaining hot coffee, stir until fully combined, then add 1/2 teaspoon vanilla extract. Taste and adjust sweetness if desired. Keep warm while preparing the milk cloud.
Milk cloud (whipped milk foam)

Chill a medium mixing bowl and beaters in the refrigerator for 5–10 minutes if possible. Cold equipment helps the cream stabilize.

Combine 1 cup chilled whole milk, 2 tablespoons cold heavy cream, 1 teaspoon powdered sugar, and 1/4 teaspoon vanilla extract in the chilled bowl.

Whip to cloud consistency
Using an electric hand mixer or stand mixer on medium-high speed, whip the milk mixture until it becomes very frothy and holds soft peaks — you want a pillowy, slightly dense foam (not fully whipped cream). This takes about 2–4 minutes depending on equipment. Stop when the foam can be scooped and sits on top of the liquid without immediately collapsing.

Top with cloud
Using a large spoon, gently scoop the whipped milk cloud and layer it on top of the mocha base so it rests like a cloud above the coffee. The foam should float and create a distinct top layer.

Optional: Drizzle 1 teaspoon chocolate syrup in a spiral or zigzag across the cloud, then sprinkle 1 teaspoon dark chocolate shavings or cocoa nibs and a light dusting (about 1/4 teaspoon) of ground cinnamon or nutmeg.

Serve immediately with a small spoon so the drinker can break through the cloud into the mocha beneath.
