    Preheat and prepare pans

    Preheat oven to 350°F (175°C). Line the bottom of two 8-inch round cake pans with parchment; lightly oil and flour the sides.

    Separate the eggs: place whites in a clean dry mixing bowl and yolks in a separate bowl.

    Whisk yolks with 1/2 cup of the granulated sugar (from the sponge ingredients) until pale and slightly thickened, about 2–3 minutes. Add vegetable oil and vanilla; whisk to combine. Whisk in instant espresso powder until dissolved.

    Sift together cake flour, cocoa powder and salt. Fold the dry mixture into the yolk mixture in two additions, stirring gently until just incorporated. The batter will be thick.

    Beat egg whites: with a clean whisk or mixer, whip the reserved egg whites to soft peaks. Gradually add the remaining 1/2 cup granulated sugar and continue whipping to glossy stiff peaks (peaks hold shape and do not slump).

    Gently fold one-third of the whipped whites into the chocolate-yolk batter to lighten it. Then fold in remaining whites in two additions, using wide strokes to maintain air. Fold until just no white streaks remain.

    Divide batter evenly between prepared pans, smoothing the tops gently. Bake 18–22 minutes, or until a toothpick inserted near center comes out with a few moist crumbs. Do not overbake—sponges should be tender.

    Cool cakes in pans for 5 minutes, then invert onto a wire rack, remove parchment, and cool completely. If layers dome, level with a serrated knife.

Mocha Chocolate Mousse

    Bloom gelatin: sprinkle 1 tsp unflavored gelatin over 2 tsp cold water in a small bowl; let sit 5 minutes to bloom.

    Place chopped bittersweet chocolate in a heatproof bowl. Stir hot brewed coffee with 1 tsp instant espresso powder; pour the hot coffee mixture over the chocolate and let sit 30 seconds, then whisk until smooth and glossy.

    Microwave or heat the bloomed gelatin just until melted (about 5–8 seconds in microwave) and whisk into the melted chocolate until incorporated. Set the chocolate mixture aside to cool to room temperature but not set.

    Whip 1 cup cold heavy cream with 2 Tbsp granulated sugar to soft–medium peaks (hold shape but still slightly billowy). Fold one-third of whipped cream into the cooled chocolate to loosen it, then fold in remaining cream until uniform and airy. Chill for 15–20 minutes to firm slightly if needed for spreading.

Whipped Cloud Frosting & Assembly

    Make coffee syrup (optional): if using, combine 2 tsp strong brewed coffee with 2 tsp sugar; stir until sugar dissolves. Brush a light layer of coffee syrup over each sponge layer to add moisture and extra coffee flavor.

    Place one sponge layer on a cake plate or turntable. Spread half of the mocha chocolate mousse evenly over the first layer in a 1/2–3/4-inch thickness. Gently top with second sponge layer, pressing lightly to level.

    Chill assembled cake for 15–20 minutes to help mousse set and stabilize before frosting.

    Make whipped cloud frosting: chill mixing bowl and whisk. Whip 1.5 cups very cold heavy cream with 3 Tbsp powdered sugar and 1 tsp vanilla to medium–stiff peaks. The frosting should be stable but still soft and spreadable.

    Frost the chilled cake with the whipped cream: apply a thin crumb coat first (a light layer) and chill 10 minutes, then apply a final thicker coat of whipped cream to the top and sides, creating a soft, cloud-like texture with spatula or spoon.

    Finish with dark chocolate shavings: using a vegetable peeler, shave 1 oz dark chocolate over the top of the cake and around the sides as desired.

    Chill the finished cake at least 30 minutes to set before slicing. For best texture, serve within 24 hours. Leftovers refrigerated up to 2 days.
