Prepare gelatin
Sprinkle 2 tsp instant gelatin evenly over 3 tbsp cold water in a small bowl. Let bloom 5 minutes until gelatin thickens slightly.

Warm gelatin
Gently warm the bloomed gelatin in a microwave 8–10 seconds or over a pan of hot water until fully dissolved and liquid (do not boil). Set aside to cool slightly but remain pourable.

Combine liquids
In a medium bowl or large measuring cup, whisk together 1 cup cold heavy cream, 1 cup cold whole milk, 1.25 cups granulated sugar and 1/4 tsp fine sea salt until the sugar begins to dissolve (about 1–2 minutes).

Incorporate mango puree
Whisk in 2 cups ripe mango puree and 1 tbsp fresh lime juice until smooth and uniform in color.

Add gelatin
While whisking constantly, slowly drizzle the dissolved gelatin into the mango mixture to ensure even distribution and avoid lumps.

Chill and aerate
Pour the mixture into a large bowl and chill in the refrigerator until it starts to thicken at the edges (about 25–30 minutes). Every 5–7 minutes, whisk vigorously or use an electric hand mixer on medium for 20–30 seconds to incorporate air. Repeat 3–4 times until the mixture is light, slightly fluffy and holds soft peaks—this creates the 'cloud' texture.

Final chill
Refrigerate the filled cups until fully set and cold, about 1–2 hours. The texture should be creamy, airy and scoopable.

Create swirl
When the mango cloud has begun to set but is not fully firm (about 20–30 minutes after filling), spoon or drizzle small amounts of the reserved mango swirl across the surface and use a toothpick or skewer to make gentle swirls. This creates a marbled, decorative effect without collapsing the cloud texture.

Garnish and finish
Top each serving with a few fresh mango cubes, a sprinkle of toasted coconut flakes (if using) and 1–2 mint leaves. Return to refrigerator for 10–15 minutes to unify the chilled presentation before serving.

Serve chilled. Spoon the airy mango cloud into small bowls or serve directly in the prepared glasses, letting guests see the delicate swirl and garnishes.
