Prepare glass
Choose a large tiki mug or a double old-fashioned glass. Fill the glass with crushed ice to chill while you assemble the cocktail.

Combine ingredients
In a cocktail shaker, add 2 oz dark rum, 0.5 oz overproof rum, 1 oz fresh lime juice, 1 oz fresh grapefruit juice, 1 oz passion fruit syrup, 0.5 oz demerara simple syrup, 1 oz pineapple juice, 0.5 oz banana liqueur (if using), and 2 dashes bitters.

Shake
Add a handful of ice to the shaker (about 5–6 standard ice cubes). Shake vigorously for 12–15 seconds until the shaker is well chilled and slightly frosty on the outside.

Strain and build
Dump the chilled crushed ice from the serving glass. Fill the glass about three-quarters full with fresh crushed ice. Double-strain the shaken mixture over the crushed ice using a Hawthorne strainer and a fine mesh strainer to remove small pulp and seeds.

Float overproof rum
Gently pour the remaining 0.5 oz overproof rum (if any left) over the back of a bar spoon to float it on top of the cocktail. If you used the full measured overproof in the shake, you can omit this step or float a teaspoon of overproof for aroma and presentation.

Garnish
Skewer the pineapple wedge and a mint sprig with the toothpick and rest it on the rim. Add one large mint sprig tucked into the top of the crushed ice. Optionally grate a small twist of lime zest over the top for extra aroma.

Serve
Serve with a straw and a small spoon. Encourage guests to stir lightly before drinking to distribute the floated rum. Consume responsibly.
