    Prepare croissants

    Preheat oven to 350°F (175°C). Slice each croissant horizontally about halfway through so top and bottom remain connected enough to hold fillings, or fully split if preferred. Lightly brush cut interior surfaces with 1 teaspoon olive oil or melted butter to help crisp and brown.

    Make mustard-jalapeño spread

    In a small bowl combine 3 tablespoons mayonnaise, 1 teaspoon whole-grain mustard, 1 teaspoon creme fraiche or sour cream, 1 teaspoon pickled jalapeño juice, and (optional) 1 teaspoon honey. Season with 1 teaspoon salt and 1/4 teaspoon black pepper. Stir until smooth and taste; adjust honey or jalapeño juice to balance sweetness and heat. Reserve.

    Warm ham and melt cheese (oven method)

    Open each prepared croissant and spread about 1 tablespoon of the mustard-jalapeño spread evenly on both cut sides (about 1 tbs on top half and 1 tbs on bottom half total per sandwich). On the bottom half layer 2 slices of deli ham, then 1 slice sharp cheddar and 1 slice monterey jack (or overlap to cover). Scatter about 1/4 teaspoon pickled jalapeños per sandwich evenly over the cheese and add 3–4 thin slices of fresh jalapeño (remove seeds for milder heat). Close croissant and place on a baking sheet lined with parchment, seam side down. Repeat for remaining croissants.

    Toast to melt

    Bake sandwiches in preheated 350°F (175°C) oven for 8–10 minutes, until croissants are warmed through and cheeses begin to melt. For a crisper exterior, switch to broil for the last 1 minute while watching closely to avoid burning.

    Alternative stovetop method

    Heat a skillet over medium-low. After assembling (with spread), place sandwiches seam side down and press gently with a weighted spatula or pan lid. Cook 2–3 minutes per side until cheese melts and croissant is golden. Cover pan briefly to trap heat and assist melting.

    Add fresh greens

    If using microgreens or lettuce, open each warm sandwich and place about 2 tablespoons (or 1/8 cup) of greens on top of the melted cheese, then close sandwich.

Plating & Serving

    Transfer sandwiches to plates. Let rest 1 minute to avoid hot cheese spill. Cut each croissant sandwich in half on the diagonal if desired. Serve immediately with extra pickled jalapeños or a small bowl of the mustard-jalapeño spread on the side for dipping.
