    Heat water

    Bring 500 ml filtered water to just below boiling — about 80–85°C (175–185°F). White tea is delicate; do not use fully boiling water.

    Steep tea

    Place 2 tsp white tea leaves (or 4 tea bags) into a heatproof pitcher or teapot. Pour the 500 ml hot water over the leaves. Steep for 3–4 minutes for a light, fragrant brew. Taste at 3 minutes and extend to 4 minutes if you prefer more body, but avoid over-steeping to prevent bitterness.

    Strain and cool

    Strain the leaves (or remove tea bags). Allow the brewed tea to cool at room temperature for 10–15 minutes, then refrigerate or place in an ice bath for 5–10 minutes until cold. You should end up with about 450–480 ml of brewed tea after slight absorption by leaves.

Coconut Milk & Sweetener

    Prepare coconut milk mixture

    In a small bowl or measuring cup, combine 120 ml full-fat canned coconut milk and 40 ml light coconut milk (or additional water if you want a lighter texture) to yield a creamy but pourable mixture. Whisk until smooth and homogenous. Add 30 ml simple syrup (or coconut syrup) and 1 tsp vanilla extract if using, and whisk again. Taste and adjust sweetness: add up to another 5–10 ml simple syrup if you prefer sweeter.

    Chill if necessary

    If the coconut milk was cold from the fridge, proceed. If it was at room temperature, place mixture in fridge for 5–10 minutes so it’s cool when combined with the iced tea to avoid melting too much ice immediately.

Assembly & Finish

    Fill a 16-oz (about 475–500 ml) serving glass or shaker about three-quarters full with ice (approx. 1 cup).

    Pour 200 ml cold brewed white tea over the ice, leaving room for coconut milk mixture. Reserve approximately 200–250 ml tea to keep balance — if your brewed yield is larger, measure 200 ml for the drink and refrigerate the rest for later.

    Slowly pour the coconut milk mixture (about 160 ml total) over the back of a spoon held just above the tea or directly into the glass so it creates a layered, marbled look. This helps with an attractive visual and allows gentle mixing.

    Stir gently with a long spoon or give the glass one or two quick stirs to combine flavors without deflating the creaminess. Taste and add extra simple syrup (5–10 ml) if needed.

    Garnish with a pinch (1 tsp) of toasted shredded coconut on top and an optional lime wedge or thin lemon slice on the rim for brightness. Serve immediately with a straw.
