    Cook ube

    Combine grated ube and 1/4 cup water in a small saucepan over medium heat. Cook, stirring frequently, until ube softens and begins to release color, about 4–6 minutes.

    Simmer with sugar

    Add 1/2 cup granulated sugar and 1/8 tsp salt. Reduce heat to low and simmer gently, stirring, for 6–8 minutes until sugar dissolves and mixture thickens into a jam-like consistency.

    Finish syrup

    Remove from heat and stir in 1/2 tsp vanilla. If you prefer a smoother syrup, transfer mixture to a blender or use an immersion blender and blend until smooth. Strain through a fine mesh sieve if desired. Let cool to room temperature. Makes about 1/3–1/2 cup ube syrup.

Strawberry puree

    Blend strawberries

    Place hulled strawberries, 1 tablespoon sugar, and 1/2 tsp lemon juice in a blender or food processor. Pulse until a smooth or slightly textured puree forms, about 20–30 seconds.

    Adjust and chill

    Taste and adjust sweetness if needed. Transfer to a bowl and chill briefly in the refrigerator while you prepare the rest of the drink. Strain through a fine mesh sieve if you want a seed-free puree.

Latte assembly

    Prepare espresso

    Brew two shots of espresso (about 2 oz total) or 2 oz strong brewed coffee. Let the espresso cool slightly (30–60 seconds) so it won’t melt all the ice immediately.

    Build the drink

    In a 16 oz serving glass, add 3 tbsp ube syrup and 3 tbsp strawberry puree. Add ice cubes to fill about 3/4 of the glass (about 1 cup). Pour the 10 fl oz cold milk over the ice and gently stir once or twice to begin mixing the syrups with milk.

    Add espresso

    Slowly pour the two shots of espresso over the back of a spoon or down the side of the glass so it layers slightly, creating a marbled effect. Stir gently to integrate more if you prefer a uniform color and flavor.

    Garnish and serve

    Top with optional whipped cream (about 2 tbsp) and sprinkle with toasted coconut flakes or crushed freeze-dried strawberries. Serve with a straw and a long spoon for stirring. Drink chilled.
