    Sift and whisk matcha

    Sift 2 tsp matcha powder into a small bowl to remove lumps. Add 60 ml hot water (about 80°C / 175°F). Using a bamboo whisk (chasen) or small frother, whisk vigorously in an M or W motion for 15–30 seconds until a smooth, frothy matcha concentrate forms with fine foam on top. Set aside to cool slightly.

Pistachio Cloud (whipped pistachio foam)

    Combine pistachio ingredients

    In a chilled metal or glass mixing bowl, add 3 tbsp pistachio paste, 3 tbsp chilled heavy cream, 30 ml whole milk, 1 tsp powdered sugar, 1 tsp vanilla extract, 1 tsp instant milk powder (optional), and a pinch (1/4 tsp) of fine salt. Warm the pistachio paste slightly if too stiff (10–15 seconds in microwave) so it blends smoothly but remains cool.

    Whip to cloud consistency

    Using an electric handheld mixer or stand mixer with whisk attachment, whip the mixture on medium-high speed. Start slow to combine, then increase speed and whip until soft peaks form and the mixture is airy and ribbon-like — about 1.5–3 minutes depending on equipment. Do not overwhip to butter. The resulting pistachio cloud should be spoonable and hold gentle peaks.

    Adjust texture and chill

    If the cloud is too loose, chill in the refrigerator for 10 minutes to firm slightly. If too stiff, fold in 1–2 tsp cold milk to loosen. Keep chilled until assembly.

Sweetened Milk Base

    Sweeten milk

    In a measuring cup or cocktail shaker, combine 10 oz cold whole milk and 1.5 tbsp simple syrup (or preferred liquid sweetener). Stir or shake until fully combined and slightly frothy. Taste and adjust sweetness to preference — this recipe targets a balanced, slightly sweet 16 oz beverage.

Assembly & Garnish

    Assemble iced drink

    Fill a 16 oz glass about 3/4 full with ice (about 1 cup). Pour the sweetened milk base over the ice, leaving room at the top for the matcha and pistachio cloud.

    Add matcha

    Gently pour the prepared matcha concentrate over the back of a spoon onto the milk (or slowly down the side) to create a layered effect. This will create an emerald green streak; stir if you prefer an even color throughout.

    Top with pistachio cloud

    Spoon or dollop the pistachio cloud onto the top of the drink, creating a fluffy 'cloud' layer approximately 1–2 inches thick. The cloud should float on the milk and slowly meld as you sip.

    Garnish and serve

    Sprinkle 1 tsp finely chopped roasted pistachios over the cloud and dust about 1/4 tsp matcha powder through a fine sieve for color. Serve immediately with a straw and long spoon for scooping the cloud.
