    Brew concentrate

    Bring 2.5 cups water to a near boil (about 200°F / 93°C). Remove from heat and steep 2 black tea bags for 4 minutes for a balanced strength (steep up to 5 minutes for stronger). Do not over-steep to avoid bitterness. Remove and discard tea bags. Allow tea to cool slightly, about 10 minutes.

Honey Lemon Syrup

    Make syrup

    In a small heatproof cup or bowl, combine 3 tablespoons honey and 2 tablespoons hot water. Stir until honey is fully dissolved. Add 3 tablespoons fresh lemon juice and stir to combine. Taste and adjust: add more honey if you prefer sweeter, or more lemon for tartness.

    Fill a 16 oz serving glass with 1 cup ice. Pour about 1/2 cup cold water or cold brewed tea into the glass (this cools and adjusts strength). Add the cooled brewed tea from the Tea Base, leaving room for ice and syrup — aim for roughly 8 ounces of brewed tea in the glass.

    Pour the honey-lemon syrup into the glass and stir thoroughly to combine. Taste and adjust sweetness or lemon by adding small increments of honey or lemon juice.

    Garnish with a lemon wheel and optional mint sprig. Serve immediately with a straw or chilled without ice if preferred.
