    Measure and heat water

    Bring 500 ml of water to a rolling boil, then remove from heat and let sit for 30 seconds so temperature falls slightly.

    Steep chamomile

    Place 2 tablespoons dried chamomile flowers into a heatproof pitcher or teapot. Pour the hot water over the flowers, cover, and steep for 6–8 minutes for a full floral flavor. For a lighter cup steep 4–5 minutes.

    Strain

    Strain the infusion through a fine mesh sieve or cheesecloth into a clean container to remove flowers. Press gently on the flowers with the back of a spoon to extract extra liquid, if desired.

Sweetener (optional)

    While the tea is still warm (but not boiling), stir in 2 teaspoons honey or simple syrup until fully dissolved. Adjust sweetness to taste. If using granulated sugar, dissolve 1–2 teaspoons into the warm tea instead.

Finish & Serve

    Cool quickly

    Allow the sweetened or unsweetened tea to cool to room temperature (about 15–20 minutes). To speed cooling, place the pitcher in an ice bath or transfer to a shallow container.

    Assemble drink

    Fill a 16-oz (about 475 ml) glass with 1 cup ice cubes. Pour the cooled chamomile tea over the ice, leaving about 1/2 inch at the top. Add 1 teaspoon fresh lemon juice and stir gently.

    Garnish and serve

    Garnish with a lemon slice or a sprig of chamomile. Serve immediately. If preparing ahead, chill tea in the refrigerator for up to 24 hours and add ice just before serving.
