Pull espresso
Brew 2 shots of espresso (approx. 60 ml total). If you don't have an espresso machine, make 60 ml of very strong brewed coffee or dissolve a concentrated instant espresso in 30 ml hot water. Allow the espresso or strong coffee to rest for 30–60 seconds so it is hot but not steaming.

Sweeten while hot
Stir 1.5 tablespoons of simple syrup (or preferred flavored syrup) into the hot espresso so it dissolves fully. Tasting note: adjust syrup amount to taste — more for sweeter drinks, less for a drier latte.

Prepare glass with ice
Fill a 16 oz glass about three-quarters full with ice cubes (roughly 1 cup). The ice cools the coffee quickly and prevents too much dilution if using cold espresso.

Combine espresso and milk
Slowly pour the sweetened espresso over the back of a spoon or down the side of the glass so it layers briefly, then gently stir 6–8 times to combine. Stirring evaporates little flavor and mixes syrup evenly.

Adjust sweetness and texture
Taste and add more simple syrup if desired (start with 1/2 tbs increments). If you prefer a creamier texture, top with 1–2 tablespoons of lightly frothed milk or shaken milk in a jar to create a thin foam layer.
