Pistachio Paste & Syrup

Toast (optional)
Lightly toast the shelled pistachios in a dry skillet over medium heat for 3–4 minutes, stirring, until fragrant. Let cool slightly.

Place the toasted pistachios, 2 tbs granulated sugar (paste), 1 tsp neutral oil, 2 tbs water, and 1/8 tsp salt into a food processor or high‑speed blender. Pulse and then blend until a smooth, thick paste forms, scraping down the sides as needed (about 2–3 minutes). Add an extra teaspoon of water if the mixture is too stiff to blend smoothly. You should end with a spreadable paste.

Make a quick pistachio syrup to sweeten and loosen the paste: stir 1.5 tbs granulated sugar with 2 tbs hot water until dissolved. Combine 1–2 tbs of this syrup with 1–2 tbs pistachio paste to create a pourable pistachio syrup. Reserve the remainder of the syrup for adjusting sweetness to taste.
Matcha Base

Sift 1.5 tsp matcha powder into a small bowl or matcha bowl to remove clumps.

Pour 3 tbs hot water (about 175°F / 80°C) over the sifted matcha. Whisk vigorously in an 'M' or 'W' motion with a bamboo whisk (or a small frother) until a smooth, slightly foamy paste forms with no lumps (about 20–30 seconds).

Heat 10 oz milk to 150–160°F (65–70°C). If you have a steam wand, steam the milk until velvety with a light microfoam; if not, heat on the stovetop and then froth with a handheld frother or whisk briefly to add slight foam. Do not boil.

Using an electric hand mixer or small whisk, beat the mixture on medium–high speed until glossy, stiff peaks form and the mixture holds shape — about 2–3 minutes with a mixer, a bit longer by hand. The result should be stable cloud-like foam.

Spoon or gently pipe a generous cloud of the egg-white foam on top of the prepared pistachio matcha, creating a domed 'cloud' above the rim if desired. The foam will gently sit above the hot drink.

Drizzle a thin stream (about 1 tsp) of the remaining pistachio syrup over the cloud for flavor and visual appeal.

Lightly dust 1/4 tsp matcha powder over the foam and sprinkle the chopped roasted pistachios (about 1 tsp) in the center.

Serve immediately with a long spoon so the drinker can break the cloud into the matcha beneath as they prefer.
