Espresso & Coffee

Milk & Foam

Method

Espresso & Coffee

  1. 1

    Pull espresso

Brew two 1-oz shots of espresso (or make 2 oz of very strong brewed coffee). Use freshly ground coffee and an espresso machine for best crema. Pour the espresso into a 12-oz pre-warmed mug.

Caramel & Sweeteners

  1. 2

Add 2 tablespoons of caramel sauce and 1 teaspoon brown sugar (if using) to the hot espresso. Stir briskly until the caramel is fully dissolved and the mixture is smooth. Taste and adjust sweetness; add the optional 1/4 tsp sea salt now if you want salted caramel.

Milk & Foam

  1. 3

    Steam milk

Steam 8 oz whole milk until it reaches about 150–155°F (65–68°C) and has a velvety microfoam. If you don't have a steam wand, heat milk on the stove or microwave until piping hot (about 140–150°F / 60–65°C) and froth with a handheld frother or whisk to create foam. Spoon about 1 oz of foam.

  2. 4

    Combine

Slowly pour the steamed milk into the mug with the caramel-espresso mixture, holding back foam with a spoon. Stir gently to combine, then spoon the reserved foam on top.

Garnish

  1. 5

Top with 2 tablespoons whipped cream if desired, then drizzle about 1 teaspoon caramel sauce over the top. Finish with a light pinch (about 1/4 tsp) of sea salt for a salted caramel variation.
