For an ultra-silky texture, push the puréed melon through a fine-mesh sieve into a bowl, pressing with a spatula to extract as much liquid as possible. Discard remaining solids.

Stir the fresh lime juice into the strained or unstrained melon purée to brighten the flavor. Chill the melon mixture in the refrigerator for at least 15 minutes while you prepare the creamy mix.

Combine dairy and sweetener
In a medium bowl, whisk together the Greek yogurt, heavy cream, and honey until smooth and slightly thickened. The mixture should be pourable but coat the back of a spoon.

Whisk in the fine sea salt to enhance sweetness and depth. Taste and adjust honey or salt to preference.

Gently fold the chilled honeydew purée into the creamy mix until evenly combined and smooth. Do not over-mix; a uniformly pale green, airy mixture is desired.

Cover the combined mixture and refrigerate for 30–45 minutes to let flavors meld and the texture firm slightly, producing a soft, spoonable consistency similar to a soft-set frozen dessert or thick mousse.

Lightly chop pistachios if using, or have sesame seeds ready. Zest half a lime to yield the lime zest.
