Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line with parchment paper. If you want a heart shape, use a heart-shaped pan (9-inch) or bake in a round pan and cut when cooled.

In a large bowl, whisk together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking powder, baking soda, and salt until evenly combined and free of lumps.

In a separate medium bowl or large measuring cup, whisk the eggs, whole milk, vegetable oil, and vanilla extract until smooth.

Add the wet mixture to the dry ingredients and stir until just combined. The batter will be thick. Pour in the hot brewed coffee and gently fold it in until smooth; the hot coffee intensifies the chocolate flavor and thins the batter to a pourable consistency.

Pour the batter into the prepared pan, smoothing the top. Bake in the preheated oven for 30–35 minutes for a 9-inch pan (20–25 minutes for a 6–8 inch heart pan) or until a toothpick inserted in the center comes out with a few moist crumbs but not wet batter. Rotate the pan halfway through baking for even browning.

Cool
Remove cake from oven and set on a wire rack. Let cool in the pan for 10–15 minutes, then invert onto the rack to cool completely (at least 1 hour) before glazing or assembling. If using a round cake and creating a heart, let cool fully and then trim and assemble into a heart shape (instructions below).

Optional: Create Heart Shape (if baked in round)
To form a heart from a round cake: use two equal-sized round cakes or cut one round cake in half. Place the two halves with the straight sides together to form the top lobes, and trim the bottom to a point. Use cake scraps to fill gaps. Crumb-coat and chill before finishing.

Chop the chocolate finely and place it in a medium heatproof bowl. In a small saucepan, heat the heavy cream until it just begins to simmer (small bubbles at the edge) — do not boil. Pour the hot cream over the chopped chocolate and let sit for 1–2 minutes to soften the chocolate.

Whisk the cream and chocolate together gently from the center outward until smooth and glossy. Add the unsalted butter and corn syrup (if using) and whisk until incorporated. If the ganache is too thick for glazing, warm it gently over a double boiler or microwave in 10-second bursts, stirring between, until pourable but not hot.

If you plan to fill the cake, allow some ganache to cool until spreadable (about 15–20 minutes at room temperature). For a pour glaze, use the ganache when slightly warm and fluid.

Combine the sugar and water in a small saucepan and heat just until the sugar dissolves. Remove from heat and stir in the espresso or coffee liqueur if using. Allow to cool. Brush the cooled cake layers lightly with syrup to keep the cake moist and enhance chocolate flavor.
Assembly and Decoration

If you baked multiple layers, level them with a serrated knife. Place the first layer on a serving plate or cake board. If using simple syrup, brush the cut surface lightly.

Spread a thin layer of ganache on the first layer to act as filling. Top with the second layer (or the other half if forming a heart). Apply a thin crumb coat of ganache around the whole cake to trap crumbs and chill 15–20 minutes to set.

Pour the slightly warm ganache over the chilled, crumb-coated cake, starting at the center and letting it flow to the edges; use a spatula to encourage even coverage and a smooth finish. If you want very clean edges on a heart shape, work carefully and trim drips with an offset spatula.

Chill briefly (10–15 minutes) to set the glaze, then return to room temperature for serving. Dust with powdered sugar through a heart-shaped stencil if desired, or arrange fresh raspberries/strawberries along the top or around the base.
