    Prepare

    Preheat oven to 350°F (175°C). Grease and line two 8- or 9-inch round cake pans with parchment paper. Bring eggs and milk to room temperature (about 20–30 minutes) for best results.

    Mix dry ingredients

    In a medium bowl, whisk together 2.25 cups all-purpose flour, 2.5 tsp baking powder, and 1/2 tsp salt until evenly distributed. Set aside.

    Cream butter and sugar

    In a stand mixer fitted with the paddle (or a large bowl with a hand mixer), beat 1/2 cup softened unsalted butter and 1.5 cups granulated sugar on medium-high speed for 2–3 minutes until light and fluffy.

    Add eggs and flavor

    Reduce speed to medium. Add 3 room-temperature eggs one at a time, beating about 20–30 seconds after each addition. Scrape the bowl. Add 2 tsp vanilla extract and 2 tbsp vegetable oil; mix until combined.

    Combine wet and dry

    With mixer on low, add one-third of the dry ingredients, then half of 1 cup milk, then another third dry, then remaining milk, then final dry — mixing until just combined after each addition. Do not overmix.

    Bake

    Divide batter evenly between prepared pans (use scale or roughly 2 cups batter per 8-inch pan). Smooth tops and bake 22–28 minutes, or until a toothpick inserted in center comes out clean and cake springs back when lightly pressed.

    Cool

    Allow cakes to cool in pans 10 minutes, then run a knife around edges and invert onto cooling racks. Remove parchment and cool completely (at least 1 hour) before decorating.

Buttercream Frosting & Colors

    Make buttercream

    In a large bowl or stand mixer, beat 1.5 cups softened unsalted butter on medium speed until pale and creamy (about 2 minutes). Gradually add 6 cups powdered sugar, 1 cup at a time, mixing on low to combine. Add 4 tbsp heavy cream, 2 tsp vanilla extract and 1/4 tsp kosher salt. Increase speed to medium-high and whip 2–3 minutes until light and fluffy. Adjust consistency with more cream (if too stiff) or more powdered sugar (if too soft).

    Tint colors

    Divide buttercream into three bowls: about 60% sky blue, 30% teal, 10% white (reserve a small amount of white for baby shark belly and eyes). Use gel colors: add ~1/2 tsp sky blue gel to the largest portion and ~1/4 tsp teal to the medium portion, mixing until uniform. Keep a small bowl of plain white buttercream for highlights and teeth placement. Keep black decorator gel/edible marker ready for fine details.

Shark Decorations & Assembly

    Level and stack

    If cake layers have domes, level them with a serrated knife. Place first layer on your cake board or turntable. Spread a thin crumb coat (about 1/2 cup) of sky-blue buttercream on top. Add second layer and apply a thin crumb coat to entire cake. Chill 20–30 minutes until crumb coat is firm.

    Final frost

    Apply a generous layer of sky-blue buttercream over the chilled crumb coat, smoothing with an offset spatula or bench scraper. Use the teal buttercream to add subtle wave streaks by dragging a small offset spatula or piping bag and swirling gently for an ocean effect. Press a little blue sanding sugar at the base if desired.

    Form baby shark body

    Roll gray/blue fondant into a rounded oval shape roughly 6–7 inches long for the baby shark body; shape a tapered tail end. If you prefer, carve a small oval out of cake scraps, cover with buttercream, then fondant for a 3D shark. Place the shark figure gently on the cake toward one side so the face is visible.

    Create fins and tail

    Use additional gray/blue fondant to form two side fins and a dorsal fin. Flatten into triangular teardrop shapes and score a seam line with a modeling tool or toothpick for detail. Attach fins to the shark body with a dab of buttercream so they stand slightly away from the body.

    Make face and teeth

    Roll tiny balls of white fondant or use white chocolate chips to form sharp little triangular teeth and attach them along the shark's open mouth with buttercream. Use the small reserved white buttercream to pipe a rounded belly on the underside of the shark and two white circles for eyes. Use black decorator gel or an edible marker for pupils and to outline a smiling mouth. Add a tiny dab of red/pink gel or buttercream for a mouth interior or cheek blush.

    Finishing touches

    Insert toothpicks or short skewers into the larger decorations to anchor them into the cake (trim to appropriate length). Scatter a few ocean-themed sprinkles around the base and place fresh berries near the shark as playful props. If you want the classic 'Happy Birthday Baby Shark' look, pipe small musical notes or letters with white or navy buttercream near the top edge. Chill briefly (15–20 minutes) to set decorations, but serve at room temperature for best texture.

    Remove any exposed toothpicks before slicing. Cut into slices and serve. Store any leftover cake covered in the refrigerator for up to 4 days; bring to room temperature before serving.
