Mixing
In a large mixing bowl or stand mixer bowl, combine warm water (about 100–110°F / 38–43°C) with instant yeast and granulated sugar. Stir and let sit 2–3 minutes until slightly foamy. Add oil, then add flour and salt. If using a stand mixer, attach dough hook and mix on low until ingredients come together, about 2 minutes.

Knead the dough for about 6–8 minutes by mixer on medium-low or 8–12 minutes by hand on a lightly floured surface, until the dough is smooth, elastic and slightly tacky but not sticky. If dough feels dry, add up to 1–2 tablespoons additional warm water; if too sticky, add up to 1 tablespoon flour.

Turn the risen dough out onto a lightly floured surface and gently deflate. Divide into 8 equal pieces (each about 110–125 g). Shape each piece into a tight ball by cupping your hand and rolling it on the countertop.

Forming Bagels
Let the dough balls rest 10 minutes, then flatten each into a disk and poke a hole through the center with your thumb. Stretch the hole to about 1.5–2 inches in diameter; it will shrink a bit during proofing and boiling. Alternatively, roll each piece into a rope about 7–8 inches long and join the ends, pinching to seal.

Place shaped bagels on a parchment-lined baking sheet or a lightly floured surface, cover loosely with oiled plastic wrap or a damp towel, and let rest for 20–30 minutes while you preheat the oven and prepare the boiling liquid.

Boil Bagels
Working in batches of 2–3, gently lower bagels into the simmering water using a slotted spoon. Boil 45–60 seconds per side (about 1–2 minutes total per bagel), flipping once halfway through. For chewier bagels and darker crust, boil longer. Remove with a slotted spoon, drain briefly, and place back on the lined baking sheet.
