    Prepare buns

    If using store-bought morning buns, slice each bun horizontally through the middle to create a top and bottom. If buns are very soft, place them cut-side up on a baking sheet and toast under a broiler or in a 350°F (175°C) oven for 4–6 minutes to gently dry and warm them; watch so they don’t burn.

    Mix softened butter, brown sugar, and coarse sea salt in a small bowl until combined. Spread about 1/2 tablespoon of the butter-sugar mixture on the cut side of each bottom bun half. This adds a caramelized-sweet note that complements the eggs.

    Make the scrambled egg mixture

    Crack the eggs into a medium bowl. Add the whole milk, salt, and freshly ground black pepper. Whisk until the mixture is uniform and slightly frothy (about 20–30 seconds).

    Cook the eggs

    Heat 1 tablespoon unsalted butter in a nonstick skillet over medium-low heat until it melts and begins to foam but not brown. Pour in the egg mixture. Allow eggs to sit undisturbed for 10–12 seconds until edges just begin to set. With a silicone spatula, gently push the eggs from the edges toward the center in slow folds, creating soft curds. Continue moving and folding occasionally for 1.5–3 minutes until eggs are just set but still slightly glossy and creamy. Remove skillet from the heat while eggs are still slightly underdone (carryover heat will finish them).

    Finish the eggs with cheese

    Immediately add the cream cheese and 3/4 cup of the grated cheddar to the scrambled eggs in the skillet. Stir gently until cream cheese melts and the cheese is evenly distributed, creating a creamy, cheesy scramble. Taste and adjust seasoning if needed. Fold in chopped chives if using. If adding cooked ham or bacon, stir it in now so it warms through.

    Assemble

    Place a generous portion of the cheesy scrambled eggs onto each prepared bottom bun (about 1/4 of the mixture per bun). Sprinkle the remaining 1/4 cup grated cheddar evenly over the eggs on each bun. Top with the bun tops and press gently to slightly compress.

    Optional melt and finish

    If you prefer the cheese extra melty and the bun warmed through, place assembled sandwiches on a baking sheet and warm in a 350°F (175°C) oven for 3–5 minutes, or broil briefly (15–30 seconds) until cheese melts—watch carefully so the buns don’t burn. Drizzle with a little hot sauce or maple syrup to taste if desired. Serve immediately.
