Tea base

Bring 300 ml water to a near boil (about 95°C / 203°F). Remove from heat and steep 2 tbs Earl Grey (about 2 tea bags) for 3–4 minutes for a bright, fragrant brew. If you prefer stronger bergamot flavor, steep an extra 30–60 seconds. Avoid oversteeping to prevent bitterness.

Strain leaves or remove tea bags and, if using, stir in up to 1 tsp honey or simple syrup to taste while the tea is hot. Allow brewed tea to cool slightly (5 minutes) so it is warm but not scalding for the cloud to sit on top.

Prepare gelatin (optional for extra stability)
If using gelatin for a very stable, airy cloud, sprinkle 0.5 tsp gelatin over 1 tbsp cold water and let bloom for 3–5 minutes. Warm gently (micro 5–8 seconds or over a double boiler) until fully dissolved; do not boil. Set aside to cool slightly but remain liquid.

Combine 120 ml whole milk, 60 ml heavy cream, 1 tsp powdered sugar and 1 tsp vanilla extract in a tall mixing container or chilled bowl. If using gelatin, whisk the dissolved gelatin into the milk mixture until evenly incorporated.

Using an electric hand frother or immersion blender, whip the milk-cream mixture vigorously for 30–90 seconds until it becomes thick, billowy, and snow-white — a stable foam with soft peaks. If using a stand mixer, whip on medium-high for 45–75 seconds. The goal is a marshmallow-like cloud rather than dense whipped cream.

If the foam is too thin, chill the container for 5–10 minutes and re-froth briefly. For a lighter cloud, fold in 1–2 tablespoons of chilled, stiffly beaten egg white or aquafaba (optional, not included in ingredients).
Assembly & garnish

Pour the warm Earl Grey into a teacup or glass leaving a little headroom (about 200–250 ml of tea in a 300 ml cup) so the cloud can sit on top without spilling.

Spoon the cloud foam gently on top of the tea, creating a lofty dome that slightly overhangs the cup edge — like a cloud. Use the back of the spoon to shape soft peaks.

Sprinkle a small pinch (about 0.25 tsp) of bergamot or lemon zest and 0.5 tsp dried lavender or tea flakes on the cloud for aroma and visual contrast. The dry garnish will rest on the foam and release fragrance as you sip.

Serve immediately. To drink, pierce the cloud with a spoon to let warm tea rise through the foam; sip through or beneath the cloud for a creamy, bergamot-forward experience.
