Combine and steep
In a clean jar or pitcher, add 0.75 cups coarsely ground coffee. Pour 3.5 cups cold filtered water over the grounds, ensuring all grounds are saturated. Stir gently to make sure no dry pockets remain.

Steep time
Cover the jar and let steep at room temperature or in the refrigerator for 16 to 20 hours. Longer steep (up to 20 hours) yields fuller extraction; shorter (16 hours) is slightly brighter.

Strain
After steeping, strain the mixture through a fine-mesh sieve lined with cheesecloth, a coffee filter, or a dedicated cold brew filter into a pitcher. If necessary, strain a second time to remove sediment. You should have about 3 to 4 cups of cold brew concentrate (strong).

Dilute (optional)
If your concentrate is very strong, you may dilute with a little cold filtered water to reach a coffee portion of about 4 fl oz for this recipe. For this 16 oz drink use 4 fl oz concentrate as listed.

Gently pour 4 fl oz cold brew concentrate over the tonic so it floats and creates a layered appearance. If you prefer sweeter, add 1/2 tablespoon simple syrup before pouring the concentrate and stir gently.

Garnish with a lemon or orange twist: express the citrus oils over the drink by twisting the peel, then run it around the rim and drop it in.

Serve immediately with a straw or stirring spoon so the drink can be mixed to taste.
