While the cake is cooling for 15 minutes, prepare the meringue-style topping. The cake should still be slightly warm but not hot when you add the topping; this helps the cloud set to the surface.

Prepare Egg Whites
Place 4 large egg whites in a thoroughly clean, dry mixing bowl. Add the cream of tartar and a pinch of fine sea salt. Using a hand mixer or stand mixer fitted with the whisk attachment, whip the whites on medium speed until soft peaks form.

Gradually add 3 tablespoons granulated sugar, 1 tablespoon at a time, increasing the mixer speed to high after each addition. Continue whipping until glossy, stiff peaks form and the sugar is fully dissolved (rub a small amount between fingers to check for grittiness). Mix in 1 teaspoon vanilla extract.

Using an offset spatula or large spoon, dollop the meringue mixture onto the warm cake and spread it into an even, cloud-like layer about 1/2–3/4 inch thick. For textural interest, create gentle peaks and swirls in the topping.

Return the cake to the oven and bake at 350°F (175°C) for 6–8 minutes, or until the meringue topping is set and very lightly golden at the highest points. Watch closely to avoid over-browning. Alternatively, for a toasted finish, use a kitchen torch to gently brown peaks after removing from oven.
