Blueberry Yogurt Base

    Combine yogurt and flavorings

    Place the 2 cups plain whole-milk yogurt in a medium mixing bowl. Add 1 tsp vanilla extract, 2 tbs honey, 1 tsp granulated sugar and 1 tsp lemon zest. Stir gently with a rubber spatula or spoon until evenly combined and slightly glossy, about 20–30 seconds. Taste and adjust sweetness with additional honey or sugar if desired.

Blueberry Compote

    Prepare cornstarch slurry

    In a small cup, whisk together 1 tsp cornstarch and 1 tbs cold water until fully dissolved and smooth. Set aside.

    Cook blueberries

    Place 1 cup fresh or thawed blueberries, 2 tbs water, 1 tbs lemon juice, 1 tbs maple syrup (or honey) and a pinch of fine sea salt in a small nonstick skillet or saucepan over medium heat. Stir to combine and let the berries warm for 1–2 minutes until they begin to soften and release juices.

    Thicken compote

    Give the cornstarch slurry a quick stir, then pour it into the simmering blueberry mixture. Stir constantly and bring the mixture to a gentle simmer for 1–2 minutes until it thickens slightly and coats the back of a spoon. If you prefer a chunkier compote, remove from heat once thickened; for a smoother sauce, mash the berries lightly with the back of a spoon or use a small immersion blender for a couple pulses. Remove from heat and let cool 5–10 minutes (it will thicken more as it cools).

Assemble & Serve

    Portion yogurt

    Divide the flavored yogurt evenly between two serving bowls or jars (about 1 cup yogurt per serving).

    Top with compote

    Spoon half of the warm or cooled blueberry compote (about 1/4 to 1/2 cup per serving depending on preference) over each portion of yogurt. Swirl gently with a spoon if you want a marbled effect, or leave layered.

    Add toppings

    Sprinkle 1 tbs granola and 1 tsp slivered almonds over each serving (or divide the shown amounts between the two). Add 3 fresh blueberries and 1 mint leaf as garnish per serving.

    Serve immediately if you prefer the compote warm, or chill 15–30 minutes for a cooler parfait-style yogurt. Stir together before eating if desired.
