Prepare the avocado spread
Halve the avocado, remove the pit, scoop the flesh into a small bowl and mash with a fork until slightly chunky. Stir in the lemon juice, 2 tsp mayonnaise, 1 tsp Dijon mustard, 1/4 tsp salt, and 1/8 tsp black pepper until combined. Taste and adjust salt or lemon as desired.

Prepare the bread (optional toasting)
If you prefer toasted bread, lightly brush one side of each slice of bread with the olive oil or spread a thin layer of butter. Heat a skillet over medium heat and toast the bread, buttered side down, 1–2 minutes until golden and crisp. Repeat for remaining slices. Alternatively, use a toaster and toast to desired color.

Assemble sandwiches
Lay two slices of bread on a work surface (toasted side up if toasted). Spread half of the avocado mixture evenly over each slice. On one slice of each sandwich, layer 4 slices of turkey, 1 slice of cheese, 1 leaf of lettuce, 2 slices of tomato (or enough to cover), and 1 slice of red onion. Top with the remaining bread slice, avocado-side down.

Finish and serve
Press the sandwich gently to compact. If desired, cut each sandwich in half diagonally. Serve immediately. Leftover avocado spread can be refrigerated in an airtight container with plastic pressed onto the surface to minimize browning and used within 24 hours.
