Melt chocolate and butter
Place the chopped chocolate and butter in a heatproof bowl set over a pot of gently simmering water (double boiler), ensuring the bowl does not touch the water. Stir frequently until smooth and fully melted, about 5–7 minutes. Remove from heat and let cool slightly (2–3 minutes) so it’s warm but not hot.

Combine sugar and cocoa
Whisk the granulated sugar and unsweetened cocoa powder together in a small bowl to break up any lumps, then whisk in the fine sea salt. Add this dry mix to the warm chocolate-butter mixture and whisk until fully incorporated and glossy.

Beat eggs and yolks
In a separate large bowl, whisk the whole eggs, extra yolks, and vanilla extract vigorously by hand (or use a handheld mixer on medium) until pale and slightly thickened, about 1–2 minutes. The mixture should be homogenous but not whipped to peaks.

Temper chocolate
Slowly pour about one-third of the warm chocolate mixture into the egg mixture while whisking constantly to temper the eggs and prevent scrambling. Continue to add the remaining chocolate in two additions, whisking continuously until completely combined and smooth.

Place the pan on a baking sheet (to catch any spills) and bake in the preheated oven for 22–28 minutes. The cake should have a thin, set crust on top while the center remains slightly soft and fudgy — a toothpick inserted near the center will come out with a few moist crumbs but not raw batter.

Cool
Remove the pan from the oven and let it cool on a wire rack for 15–20 minutes. Run a knife around the edge to loosen, then remove the springform collar (if used) or invert the cake onto a serving plate if you prefer. For a clean top, invert once more onto a second plate so the browned top faces up. Allow to cool to room temperature; the cake will set further as it cools.

Dust and serve
Just before serving, dust the top lightly with confectioners' sugar. Serve slices with a dollop of unsweetened whipped cream or crème fraîche and fresh berries on the side if desired. For warm slices, reheat individual portions briefly in the microwave (10–12 seconds) to restore a molten texture.
