Method

Preparation

1

Add Ingredients to Shaker

In a cocktail shaker, combine 2 oz of pisco, 1 oz of fresh lemon juice, 0.5 oz of simple syrup, and 1 large egg white.

2

Dry Shake

Seal the shaker and shake vigorously without ice for about 15 seconds. This helps to froth the egg white.

3

Shake with Ice

Add ice to the shaker and shake again for an additional 15 seconds to chill the mixture.

4

Strain into Glass

Strain the mixture into a chilled coupe or cocktail glass.

5

Add Bitters

Add 2 dashes of Angostura bitters on top of the frothy surface for garnish.
