Chilean Sea Bass and Chili Citrus Butter

    Prepare the Fish

    Preheat your oven to 400°F (200°C). Pat the Chilean sea bass fillets dry with paper towels and season both sides with salt and black pepper. Place them on a baking sheet lined with parchment paper.

    Make the Chili Citrus Butter

    In a small saucepan, melt the butter over medium heat. Add the minced garlic and chopped chili peppers, cooking for 1-2 minutes until fragrant. Stir in the lime juice, cilantro, orange zest, and lime zest. Cook for another minute, then remove from heat.

    Roast the Fish

    Drizzle the olive oil over the sea bass fillets and pour half of the chili citrus butter over the top. Roast in the preheated oven for about 15-20 minutes or until the fish is opaque and flakes easily with a fork.

    Serve

    Remove the fish from the oven and drizzle the remaining chili citrus butter over each fillet before serving. Enjoy your roasted Chilean sea bass!
