Prepare the Ravioli Dough

    Mix the Dough

    In a large bowl, combine the all-purpose flour and salt. Create a well in the center and add the eggs. Gradually mix the flour into the eggs until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

Prepare the Lobster Filling

    Mix Filling Ingredients

    In a mixing bowl, combine the lobster meat, ricotta cheese, Parmesan cheese, parsley, lemon juice, salt, and black pepper. Mix well until combined.

Assemble the Ravioli

    Roll Out Dough

    Divide the dough into four pieces. Roll out one piece at a time to about 1/16-inch thickness. Keep the remaining dough covered to prevent drying out.

    Fill the Ravioli

    Place small spoonfuls of the lobster filling about 2 inches apart on one half of the rolled-out dough. Fold the other half over and press down to seal, ensuring there are no air pockets. Cut into squares or circles using a pasta cutter.

    Boil the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 3-4 minutes or until they float to the surface. Remove with a slotted spoon.

    In a saucepan, melt the butter over medium heat. Add minced garlic and sauté until fragrant. Stir in heavy cream and bring to a simmer. Add lemon zest, salt, and black pepper to taste.
