Peppercorn Demi Glace

Preparation

Preparing the Filet Mignon

1. Season the Steak

Season the filet mignon with salt and black pepper on both sides.

2. Sear the Steak

Heat olive oil in a skillet over medium-high heat. Once hot, add the filet mignon and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.

3. Rest the Steak

Remove the steak from the skillet and let it rest for 5 minutes before serving.

Preparing the Peppercorn Demi Glace

4. Sauté Shallots

In the same skillet, add shallots and sauté until translucent.

5. Deglaze with Wine

Pour in the red wine and bring to a boil, scraping the brown bits off the bottom of the skillet. Reduce by half.

6. Add Beef Stock

Add the beef stock and crushed black peppercorns. Simmer until reduced and thickened, about 15-20 minutes.

7. Finish the Sauce

Stir in the butter until melted and smooth. Strain if desired, and keep warm.
